Lena's Burritos



On a busy day Lena made burritos and they had beans, cheese, lettuce, and sour cream for the toppings.
It was a rainy day today weather wise.
I like burritos from scratch the best and it was good.

It was nice also because I like how it didn't take real long to make. It went pretty quick tonight.

Recipe
8 flour tortillas
Ground beef
1 can re fried beans
1 packet taco seasoning
1 cup water
Toppings

Brown the ground beef. Drain ground beef and return to the pan. Add taco seasoning, water, and beans. Bring mixture to a boil and then reduce heat and simmer for 5-10 minutes. Assemble burritos.

Chicken Parmesan



Today we had Chicken Parmesan and it was good. Josh and Johnny were playing a hockey game before dinner. It got a little hot in the room so we opened the window to cool off because it was nice out.

To start dinner we had to get the ingredients out. Then we had to put the spaghetti sauce into the baking pan. While we were getting dinner ready, the table fell because it wasn't latched. The spaghetti sauce splattered everywhere. Josh had sauce on his socks, Ms. Jamie had some on her shoes, and it was all over the floor. After cleaning up the mess, we continued making the chicken parmesan. It had to cook in the oven for 30 minutes and we had to make the pasta.

  • 6 chicken tenders (or 2-3 chicken breasts)
  • salt & pepper
  • 1-16oz jar marinara sauce
  • 1/4 cup parmesan cheese
  • 1/2 teaspoon dried basil
  • 1 cup Mozzarella cheese
  • 2 servings cooked pasta
  • Preheat oven to 400 degrees. Pour marinara sauce in an oven-safe baking dish then add parmesan cheese and basil and stir to combine.
  • Lightly season chicken with salt & pepper then nestle it into the sauce mixture, covering it completely with sauce.
  • Top with mozzarella cheese and cover loosely with foil. Bake at 400 degrees for 20 minutes. Remove foil and bake for 10 more minutes, or until chicken is cooked through. Serve on top of cooked pasta.






















While the meal was cooking, we talked about where everyone was going for spring break. I think the meal was easy to make. I liked that the chicken was cooked and covered in melted cheese.

Baked Chicken and Mashed Potatoes


Another Thursday, still wishing it was another Sunday.  So moving on to the good news of tonight.  Tonight’s chef is Carly!  She will be making baked chicken and mashed potatoes with butter, salt, and/or gravy.   So lets start cooking!




Chicken recipe:
10 pieces of chicken
A small bowl of water
A box of shake and bake

Mashed Potatoes recipe:
8 Potatoes
Milk
Garlic Powder
Butter
Salt and Pepper
Gravy




Directions:
First we started with the chicken.  Carly heated the oven to 400F, and then she cut the fat from the chicken.  After that she dipped the chicken into a bowl of water, then placed the chicken into the coating mix bag.  Now with the chicken in the bag she shakes the bag until the chicken is fully coated.  She repeated this step several times until all the chicken pieces were covered.  Then she placed the covered chicken into a 13x9-inch pan and cooks it for 20mins or until done.







         Now we move onto the potatoes.  First Carly skinned and cut the potatoes into small pieces and boiled the potatoes until they were smooshy.  While waiting for the potatoes to cook, Carly heats up the gravy to medium heat on the stove and waits until its warm.  After the potatoes are ready Carly drains the water and she puts the them into a bowl and adds the garlic powder into the bowl and then she mix them with a hand mixer.  While mixing the potatoes she adds milk to soften the potatoes.

        

After awhile of waiting the chickens, the potatoes, and the gravy are ready to eat.  Everyone gets a piece and has the option to add gravy, butter, salt, or pepper to their potatoes or not.  Tonight’s meal smells good and looks good enough to eat.  The chicken was okay but I did not like the mashed potatoes that much.  Everyone else enjoyed their meal so much they were up for seconds in a flash.  So waiters check please!

Delicious Homemade Cake



After a long day of Monday classes, I was exhausted and excited for cooking lab. I knew the day wouldn't be over until after 10 since I had a CAB meeting.  I was excited to have baking lab before the meeting to give me a boost of energy.

When we had baking lab we made red velvet cake which tasted so good since it was freshly cooked from the oven.  After eating the cake, my night went better since I love cake.















Ingredients
·         3 eggs
·         ¼ cup of oil
·         1 cup of water
·         Cake mix
·         Cake mix special ingredient cream packet
·         Cream cheese frosting

Directions
  •        First you pour cake mix and packet in a mixing bowl.
  •        Then you crack 3 eggs and put them in the mixing bowl.
  •        Then you measure ¼ cup of oil and pour that in the mixing bowl.
  •        Then you measure 1 cup of water and pour it into the mixing bowl and blend it all up.
  •        Finally you pour the mix into a cake pan and bake it for 23 minutes.
  •        When it is done you take it out of the oven and frost it and eat after it cooled down.



While the cake was baking, we played a game called 20 questions. It was fun, but it was hard to be the person who had to think of the thing. And fortunately for me, I came up with a good thing that no one could guess what it was – Snow!
