Cinnamon Rolls and Chocolate Lava Cake









We waited  in the rain for the Coralville bus to come. It was such a crummy day outside tonight. We were waiting to go to Ms. Jamie's house once again. We made Cinnamon Rolls and Chocolate Lava Cake tonight in baking lab. We watched the food network channel while everyone finished eating and waiting for the bus to come. Connor had a hard time figuring out the TV which was some good entertainment. Tonight was a great night for some Cinnamon Rolls and Chocolate Lava Cake. 


Recipes 

Cinnamon Rolls

  • Biscuits
  • Milk
  • Cinnamon
  • Sugar
  • Frosting

  1. Placed biscuit dough in the pan
  2. Mix cinnamon and sugar
  3. Cover each biscuit with cinnamon and sugar
  4. Add milk to the bottom of the pan
  5. Cook for 8-11 minutes (or time listed on the biscuits)
  6. Frost when cooled








Chocolate Lava Cake

  • Chocolate cake mix
  • 3 eggs
  • Water
  • Vegetable Oil
  • Chocolate Frosting
  1. Made cake mix using box directions
  2. Add spoonfuls of frosting to the mix
  3. Cook in the microwave for 15 minutes
  4. Flip bowl onto a baking sheet and watch the chocolate lava flow!

Ham and cheese sandwhich with mozzarella sticks

Today was a rainy day while waiting for the bus. Then we went to Ms Jamie's apartment and got to make ham and cheese sandwiches which were really good. We also drank Capri sun juices. I took some good pictures of the making of the mozzarella sticks and the ham and cheese sandwiches.

Recipes

Ham and Cheese Hawaiian Rolls 

  • 1 12pack King's Hawaiian Sweet Rolls
  • 1lb deli shaved ham
  • 1lb swiss cheese sliced thin
  • 1.5 sticks butter
  • 1.5 Tbs Dijon mustard
  • 1.5 tsp Worcestershire sauce
  • 1.2 tsp minced onion (dried)
  • 1-2 cloves garlic (optional)
  1. Melt butter and mix in mustard, sauce, and onion.
  2. Cut entire pack of rolls in half (top and bottom).
  3. In a 9x13 pan, place bottom half of rolls and cover with ham and cheese. Then cover with tops of rolls. 
  4. Drizzle butter mixture over the rolls, making sure onion is evenly dispersed. 
  5. Bake at 350 for 15-20 minutes. 


Mozzarella Sticks

  • String Cheese
  • 2 eggs
  • Italian bread crumbs
  1. Open the string cheese and cut them in half
  2. Scramble 2 eggs in a bowl
  3. Open bread crumbs and pour in a different bowl
  4. Place string cheese pieces in the eggs and then bread crumbs, covering each time
  5. Place string cheese on a baking sheet and back 10-15 minutes at 350 until slightly melted
  6. Allow cheese to cool for 3-5 minutes before eating

Rice Krispies



Today on a busy Monday Carly made Rice Krispie treats and they were good.
I liked it how they did not take very long to make.
It was a nice and a simple dessert to bake.
And it was nice to watch somebody make something nice and simple to make and not have to have much help making it.






















Rice Krispies
  • 6 cups Rice Krispies cereal
  • 4 Tablespoons butter
  • 1 bag marshmallows

  1. Grease a baking dish with butter.
  2. Melt 4 Tablespoons of butter in a pan on the stovetop. Add marshmallows and mix until melted.
  3. Take the pan off the heat and mix in the cereal.
  4. Pour the mixture into the pan and press down.
  5. Let bars cool before cutting and serving.

Chicken Enchiladas

The weather is beautiful today in Iowa City, Iowa. Tonight for cooking class Brandon made chicken enchiladas. To start off with preparing the chicken enchiladas, Brandon put the chicken breasts in a deep pan and cooked them for 30 minutes. 

When the chicken was cooked, we mixed it with cream of chicken soup and cheese. Then we put the mixture in tortillas. Brandon had everyone make their own chicken enchilada.

The enchilada sauce that we used had good flavor. I think the enchiladas could have been cooked longer, because the shells were not crispy and I like crispy enchilada shells. The enchiladas were very cheesy. A lot of the people liked the cheese, but I thought there was too much and I couldn't taste the enchilada sauce. 

If you are a fan of chicken enchiladas then I suggest you try this.  


Recipe

  • Chicken breasts
  • Cream of chicken soup
  • Cheese
  • Enchilada sauce
  • Tortillas
  1. Cook chicken in the oven at 350 for 30 minutes.
  2. Cut chicken into bite sized pieces.
  3. Combine chicken, soup, and cheese in a mixing bowl.
  4. Place mixture on tortillas and roll. Place rolled enchiladas in a baking dish. 
  5. Cover with sauce and cheese.
  6. Cook for an additional 15-20 minutes, or until cheese is melted.

Yummy Chicken Pot Pie




After a fun long day of classes I was ready for one of my favorite meals. The name of this meal was called chicken pot pie. I like the box chicken pot pies but never knew how to make one. I am so glad we made one tonight so I could learn how.























Ingredients- chicken, mixed vegetables, pie crust, cubed potatoes, milk, cream of chicken soup, cream of celery soup

Instructions- bake chicken for 30 minutes. Put cream of chicken soup, cream of celery soup, cooked chicken, and ¾ cups of milk in mixing bowl. Then add the vegetables. Cook potatoes on stove then add to bowl. Then put in pan and cover with pie crust on top. Let it sit on stove for 10 minutes to cool down. Then eat and enjoy.



I enjoyed the meal but I would only put in peas and carrots and potatoes if I made it again.

Chocolate Chip Brownies


Chocolate Chips Brownies

       The weather is nice today and hopefully the rest of the year it will stay nice and warm.  This would be a great day if I had some cake but since we don’t have any I guess we will settle with brownies.  Tonight our special cook is that unforgettable Josh U.



First Josh sets the oven for 350 degrees.  Next he gets a big bowl and mixes the package of mix with the oil, water, and the eggs.  Ran into a little problem when Josh lost an egg, thank god for Josh’s good neighbors Jane and Carly who donated an egg.  To everyone’s surprise Josh added a bag of chocolate chips to the mix to make it extra chocolaty. Then he takes a large spoon and stirs it for 50 strokes. 



Before he pours the mix into the pan he greases the pan with cooking spray.  Now we just wait for 28 to 30 minutes.  While waiting we listened to Ms. Katelyn tell us about club night from when she was gone on Thursday.  When the brownies were done they were warm and smelled good enough to eat.  Ms. Jamie and Ms. Katelyn showed the technical way to check if they were done by shaking it.  


       Recipe

1: 1 package of brownies mix
2: 2/3 cups of oil
2:  ¼ cups of water
3: 2 eggs
4: chocolate chips


So thanks for the treats Josh but next time try using less chocolate because you know the saying; Too much of a good thing can be bad for you!

Lasagna

Tonight in cooking lab Josh made us lasagna. For a great night in Iowa city it was a good meal.  Also Jonny cut and brought down some watermelon for us to have as a side with the lasagna. There wasn't really a lot to do to the lasagna. We had to cook the hamburger meat and mix the cheese, hamburger meat, and cottage cheese. Then we poured spaghetti sauce in the pan and put the noodles and hamburger mix in the pan. We had to layer the ingredients a few times. When Josh had to cover the lasagna he didn't have any aluminum foil so he had to borrow from Carly and my room.








































The hardest part of the meal was that it took awhile. The lasagna had to cook longer than the recipe said. It was nice to have the watermelon as a snack. Thanks Jonny and Carly for cutting it.




















While we were waiting for the food to cook we played a couple rounds of twenty questions which was fun. Connor had some really good objects when we were playing twenty questions.

Recipe
1 jar spaghetti sauce
1 pound browned hamburger
lasagna noodles
1 15oz container of cottage cheese
2 cups of shredded mozzarella cheese (1 bag)
1/2 cup of Parmesan cheese


  1. Mix hamburger, cottage cheese, mozzarella, and Parmesan cheese together
  2. In a 2 quart baking dish spread 1 cup spaghetti sauce on the bottom
  3. Top with one layer of noodles
  4. Cover with hamburger and cheese mix
  5. Cover with sauce
  6. Continue to layer until all is gone
  7. Bake at 350 for 45 minutes covered with foil. Then remove foil and top with more mozzarella and bake for another 15 minutes. 
  8. Let set for 10 minutes before cutting.

Corn Muffin

The weather is beautiful today in Iowa City, Iowa. Today for baking lab Jane made corn muffins from a box. Jane had to borrow the muffin pan and paper muffin cups from Brandon. Jane mixed up the colors for the paper muffin cups when she placed them in the muffin pan. She thought it would be fun to have more colors. I thought the corn muffins were very good. I wish we would of had honey and butter to put on the corn muffins. Corn muffins are similar to corn bread, except they are made in a muffin pan. This corn bread recipe was a nice and quick recipe to make on a baking night. I would recommend if you like corn muffins you should try this recipe. Corn muffins would be good with BBQ food and chili.

This corn muffin recipe that we made tonight required very few dishes.

Directions:

1. Preheat oven to 400 degrees. Line 6 to 8 regular-size muffin cups with paper baking cups, or grease just the bottoms of the muffin cups.

2. Blend muffin mix, 1/3 cup 2% milk and 1 egg in medium size bowl. Stir until blended, about 50 strokes by hand. DO NOT USE ELECTRIC MIXER. Fill muffin cups 2/3 to 3/4 full.

3. Bake 15 to 20 minutes or until golden brown and tops spring back when touched lightly. Immediately remove from pan. Makes 6 to 8 muffins.
